Series of 5 Cooking Classes for 4 People
Chef Davide has been teaching classes for the last 15 years, helping people gain a treasured universe of knowledge about Tuscan cuisine. He puts his heart into these classes and as a result the sessions are extremely entertaining.
Our normal cooking class is $195 per person, but this series of 5 classes is only $150 per person per class (with the possibility of adding extra guests upon request to either one or all classes upon request).
These classes follow a program that Chef Davide created to transform your culinary skills from basic knowledge of Tuscan cuisine to advanced. Each is class is hands-on and will cover 3 different dishes, depending on your taste, and 3 completely different techniques, which you can use for the preparation of many other dishes.
These classes are offered at the beginning of every year and the dates are flexible according to availability. They can be set up weekly, bi-weekly or monthly.
Classes can be taught at the home of any of the members of your group, and can change location from one session to another.
OVERVIEW OF THE 5 CLASSES
Getting to the core and heart of Tuscan cuisine with the most traditional comfort food...simple food, but not so simple to prepare. Using breads and vegetables, preparing soffritto for sauces and getting to know the ingredients. Some of the things covered are the Ribollita Toscana, panzanella, pappa al pomodoro, schiacciata, crostini toscani, salsiccia e fagioli and plenty more choices with different techniques.
Understanding the basics will open the door to the whole universe of Tuscan dishes.
Dedicated to pasta! Discovering and understanding the different types of pasta, fresh pasta making, artisan dry pasta and egg pasta. Understanding how to combine and prepare sauces with the proper pasta. Filled pasta like ravioli, tortelloni, cannelloni, agnolotti and many others to choose from.
Gnocchi, risotto, and baked pasta such as lasagna, cannelloni, crespelle and pasta al forno.
Use of bechamel sauce, meat sauce and all ingredients necessary to get the most authentic results.
Meat and game. There is so much to discover and so much to choose from when it comes to game. Tuscan cuisine is so much about wild boar, venison, rabbit, quail, lamb, osso buco, pheasant, bollito misto and so much more. Learning how to prepare the wild boar like in San Gimignano or the roasted rabbit with local olives will bring the flavor of your Tuscan holidays back.
Seafood. Chef Davide is a native of Livorno, where he grew up just across the street from the fish market and the docks where the fishing boats arrived in the early morning. This class will open your eyes to how Italians eat their seafood so differently than any american does. Learn how to use sea urchin, octopus, squid ink, how to cook a perfect branzino bass and how it has been done for hundreds of years.
